Kitchen Duty

Wow never had any idea what all was involved in this restaurant when I started. Before even opening we have to renovate the kitchen and get all the appliances working. Not to mention the liscence changed hands this year so we're guaranteed an inspection at some point.

I'm sleeping in my tent on the property outside the restaurant so it's cold since I'm pretty far north. Luckily my dog sleeps in the tent with me to keep me warm. Either way I'm up at like 5:30-6:00 everyday and in the kitchen by 8 and were not even open yet.

Things are coming along though slowly but surely. We should be ready to open about the first week of June.

So far it's a great time with freinds the mood is pretty jovial it's the first time any of us have ever worked in let alone run a restaurant so there's a whole lot of learning going on and the curve is pretty steep. But we'll get it sooner or later. Start testing recipes next week, oh yeah that's tommorow.

Well lets see breaksfast is cofee and pastries and smoothies, for lunch it's Panninis Salads and Pizza for supper there is going to be Saukraut and Sausage, Kyoto Salmon, des Boules de Morue and whatever else I can dream up. By the way were all going to see up the Yangtzee tonight in Gaspé. To think you guys made it all the way up here
